Friday Food ~ Italian Wedding Meatball Soup

Wisconsin weather is weird! One day we're 60 degree, then next in single digits! And during these cold weather months, soup is an all time favortie!


One of our favorites is Italian Wedding soup, and I have two seperate recipes. This one is the white version, over the next few weeks I'll bring you the red version but for now, I hope you enjoy this one!

Italian Wedding Meatball Soup
 
 
What you need for MEATBALLS:
  • 1 lb gournd beef
  • 1 lb ground pork
  • 1/2 cup chopped onion
  • pinch of parsley
  • 1 egg
  • 1 tsp garlic
  • 1/2 tsp peper
  • 1 cup Italian style bread crumbs
  • 1/2 grated parmesan cheese
 What you need for SOUP:
  • 3 individual containers of Knorr Homestyle Chicken Stock
  • 1 lb spinach, chopped
  • 2 eggs, beaten
  • Shredded parmesan cheese
 
How to:
  1. Boil water according to Knorr Homestyle Chicken Stock directions
  2. When boiling, add concentrated stock containers
  3. In the meantime, combine meatball ingredience without over mixing
  4. Add meatballs to soup
  5. Simmer 30-45 minutes
  6. Add spinach and cook for an additional 10 minutes
  7. Slowly add beaten egg while stirring, cook for additonal 10 minutes
  8. Spinkle with shredded parmesan cheese
